Cookies and Cream Bars

Cookies and Cream Bars are baked treats combining browned butter and brown sugar to create a rich base that is soft and slightly chewy. This batter includes crushed Oreo cookies for chunks of chocolate sandwich cookies throughout. The bars bake in a 9x13-inch pan until set, offering a dessert with a buttery sweetness balanced by the distinctive flavor and texture of the Oreo pieces. A sprinkle of flaky sea salt adds a subtle contrast to the sweetness.

Description

Cookies and Cream Bars blend a browned butter base with light brown sugar, eggs, and vanilla to form a smooth, rich batter. All-purpose flour, baking soda, and salt provide structure, while crushed Oreo cookies are folded in to disperse chocolatey crunch throughout the bars. The butter is browned to add depth and nutty flavor before mixing into the sugar and eggs. The batter is pressed evenly into a buttered 9x13-inch pan and baked at 350°F until just set but still moist, with soft edges and a tender center.

The texture balances chewiness with the crunch and creaminess of the cookie pieces, making it a satisfying dessert that pairs well with milk or coffee. Optionally, a light sprinkle of flaky sea salt on top can enhance the richness and add subtle saltiness to highlight the sweet flavors.

These bars keep well stored at room temperature and can be cut into squares for easy serving or packed as a portable treat. The straightforward steps and common ingredients make them an accessible homemade dessert with a familiar yet distinct cookies and cream taste.

Ingredients

Servings
  • 1 cup butter unsalted
  • 1 1/2 cups light brown sugar loosely packed
  • 2 egg lightly beaten
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 20 Oreo cookies crushed into pieces
  • sea salt optional, flaky

Instructions

  1. Preheat the oven to 350 degrees F. Have a 9x13 inch baking dish out.
  2. In a small bowl, whisk together the flour, baking soda and salt.
  3. Place the butter in a skillet over medium heat. Cook and let the mixture bubble, stirring occasionally, until brown bits begin to appear on the bottom. Once the brown bits appear, turn the heat off and continue to stir for about 30 seconds. Let the butter cool slightly. Take a pastry brush and brush a bit of the butter all over the bottom and sides of the 9x13 inch dish.
  4. Place the brown sugar in a large bowl. Pour in the brown butter and mix until combined and smooth - the sugar will somewhat dissolve. Add the eggs one at a time, stirring immediately after so they don’t cook if the butter is still warm. Stir in the vanilla extract.
  5. Use a wooden spoon to stir in the dry ingredients until they are almost combined. Stir in the crushed oreos until they are evenly dispersed.
  6. Press the mixture into the buttered dish. Bake for 25 to 30 minutes, or until the top is golden brown and set in the center. Remove the dish and sprinkle the top with flaked salt if you wish. Let cool completely before slicing into squares.
