Description
Cookies and Cream Bars start with a blend of flours and leavening agents to create a tender yet structured dough. Butter is creamed with sugars until light and fluffy, then eggs and vanilla extract are incorporated for moisture and flavor. Oreos and chopped Hershey’s Cookies ‘n’ Crème bars introduce a combination of chocolate and creaminess throughout the batter alongside mini chocolate chips for bursts of chocolate flavor.
The dough is pressed into an 8x8 inch pan and topped with extra Oreo pieces, then baked until the edges brown lightly and a toothpick inserted near the center comes out mostly clean. The bars cool and set, maintaining softness inside with a slightly firmer crust.
These bars can be served as a dessert or snack offering the rich texture of cookies combined with cream-filled chocolate bars. The contrast of crunchy cookies and smooth chocolate pieces defines their character.
Baking time can vary depending on ovens; watch for browning edges to avoid overbaking and dryness. Freezing the Hershey’s bars before chopping is recommended but not required.
Ingredients
- 1 1/4 cup all-purpose flour
- 3/4 cup cake flour
- 1 tsp. cornstarch
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup butter unsalted, cold, cut into cubes (8 Tbsp
- 1/2 cup brown sugar packed, light or dark
- 1/4 cup granulated sugar
- 1 large egg
- 1 large egg yolk
- 1 tsp. vanilla extract
- 4 (1.55 oz.) HERSHEY’S Cookies ‘n’ Crème Bars chopped
- 15 Oreos divided (10 mixed into batter, 5 go on top
- 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350°F.
- Line an 8x8 inch pan with parchment paper or non-stick baking spray and set aside.
- Whisk together the dry ingredients in a large bowl: All-Purpose flour, cake flour, corn starch, baking soda, baking powder and salt. Set aside.
- Using a stand mixer fitted with the paddle attachment, cream the butter, white sugar and brown sugar together up to 4 minutes or until light and fluffy.
- Add in the eggs, egg yolks, and vanilla extract.
- Gradually add in the dry ingredients and then add in the Oreo cookies, mini chocolate chips and chopped cookies and creme bars.
- Press dough into a prepared pan in an even layer.
- Press more Oreo pieces on top and bake for ~20 minutes* or until a toothpick inserted into the center comes out mostly clean.
- Let bars cool for ~15 minutes. Cut into bars and enjoy!
Notes
- Remove bars from oven when edges just start to brown to avoid overbaking; bars will firm up while cooling.
- You may substitute your preferred type of chocolate chips such as semi-sweet, dark, or milk chocolate.
- Freeze Hershey’s Cookies ‘n’ Crème bars briefly before chopping for easier handling, but it is optional.
