Description
This recipe starts with a white cake mix and instant vanilla pudding mix combined with eggs and vegetable oil to create a moist, dense cookie dough. Crushed Oreo cookies and two types of chocolate chips—vanilla baking chips and mini chocolate chips—are folded in to integrate rich chocolate flavor and crunchy cookie pieces. The dough is scooped onto parchment-lined sheets and gently pressed to flatten before baking at 350°F for about 9 to 10 minutes. The cookies appear soft when removed but firm up while cooling.
The resulting cookies have soft, tender centers due to the pudding mix and slightly crisp edges from baking. The incorporation of Oreos adds creamy chocolate sandwich cookie flavor and texture. Ingredients
- 15.25 oz box white cake mix
- 3.4 oz box instant vanilla pudding mix
- 2 large egg
- 1/2 cup vegetable oil
- 1/2 cup Oreo cookies approximately 10-12 cookies, crushed
- 1/4 cup vanilla baking chips (white chocolate chips will work as well)
- 1/4 cup mini chocolate chips
Instructions
Prepare
- Preheat oven to 350 F degrees. Line 2 baking sheets with parchment paper and set aside.
- Coarsely chop Oreo cookies (either with a knife, in a food processor, or add them to a plastic bag and smash them with a rolling pin).
Mix dough
- In a large mixing bowl, combine cake mix, pudding mix, egg, and oil using a whisk.
- Use a rubber spatula to stir in the crushed Oreo cookies, vanilla chips and mini chocolate chips.
Bake
- Lightly spray a 1 Tbsp cookie scoop with cooking spray (this helps the dough release from the scoop). Scoop batter onto prepared baking sheets, about 2 inches apart.
- Use your fingers to gently press the cookies down a bit (and you can press some additional Oreo cookie pieces/chocolate chips on the top as well).
- Bake 9-10 minutes. Cookies will look soft and not quite done in the center when you take them out. Don't worry, they'll keep cooking while on the baking sheet.
Cool
- Let cool on baking sheets for 5 minutes, then remove to a cooling rack to cool completely.
Notes
- The recipe yields approximately 22 cookies; it can be doubled for more servings.
- Use a white cake mix without pudding already included to balance texture and moisture.
- For best results, lightly spray the cookie scoop with cooking spray to prevent dough sticking.
