Description
Cookies & Cream Bars feature a base made by creaming together softened butter and cream cheese, then incorporating sugar, eggs, and vanilla until fluffy. The addition of baking powder to the flour mixture provides gentle leavening, resulting in bars that are tender yet slightly firm. Crushed Oreo cookies dispersed throughout the dough add bursts of chocolate and crunch, while mini chocolate chips enhance the chocolate presence. Baking at 350°F until the edges turn golden ensures the bars set with a soft center and crisp edges.
The topping scattering of extra crushed Oreos and chocolate chips before baking creates a textured surface that contrasts with the creamy interior. Once cooled fully, these bars cut neatly and can be served alone or alongside milk or tea. The combination of cream cheese and chocolate makes this dessert special compared to typical cookie bars.
To prepare, use a well-greased 13x9 pan and scrape down the mixing bowl during ingredient incorporation to ensure even mixing. Cooling before slicing allows the bars to firm up for clean cuts.
Ingredients
- ½ cup butter softened
- 8 oz cream cheese softened
- 1 ¾ cups sugar
- 2 egg large, plus 1 extra yolk
- 1 tsp vanilla extract
- 2 ¼ cup all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- ¾ cup mini chocolate chips plus additional 2 Tbsp
- 18 Oreo cookies divided don't completely pulverize them to crumbs, you want to have cookie pieces in these bars, crushed, plus additional 6 crushed
Instructions
- Preheat oven to 350F and grease a 13x9 pan.
- In KitchenAid mixer, cream together butter and cream cheese.
- Scrape down sides of bowl with a metal spatula and beat in sugar until light and fluffy.
- Add eggs and then vanilla.
- In a separate bowl, combine flour, salt, and baking powder.
- Gradually stir the flour mixture into your cream cheese mixture until completely combined (be sure to pause occasionally to scrape down sides of bowl).
- Stir in mini chocolate chips and 18 crushed Oreos.
- Spread into prepared pan and sprinkle the additional 2 Tbsp mini chocolate chips and 6 crushed Oreo cookies overtop.
- Bake for 30-35 minutes (edges will begin to turn golden brown) and allow to cool before cutting and serving.
