Copycat Starbucks Egg Bites

Ever tried egg white bites or Starbucks bacon egg bites? Make copycat Starbucks egg bites at home in your oven or instant pot with a silicone egg mold.

Ingredients
Grease Silicone Mold
- cooking spray
Add to Egg Mixture
- ½ teaspoon salt
- ¼ teaspoon pepper
Bacon and Gruyere
- 8 large eggs, beaten
- ½ cup bacon or turkey bacon, cooked and diced
- ½ cup gruyere cheese or old cheddar, grated
Egg White, Spinach and Red Pepper
- 2 cups egg whites, beaten (16-20 eggs roughly)
- ½ cup roasted red peppers, drained and diced
- ½ cup spinach, finely chopped
- ½ cup Monterey Jack cheese, grated
Ham and Cheddar
- 8 large eggs, beaten
- ½ cup ham, diced
- ½ cup cheddar, grated
- ½ cup sweet peppers, red and/or green
- ¼ cup cottage cheese, if desired (I have used cottage cheese a few times but because I don't have cottage cheese usually in my home I rarely use it)

Instructions
- Preheat your oven to 325 degrees F.
- Prepare your silicone egg mold with cooking spray.
- Decide which kind of egg bites you wish to make and get out all of your ingredients. If you want to make two different kinds of egg bites please divide your ingredients in half.
- Fill your baking pan or dish halfway with very warm water. Then place your greased silicone egg tray overtop of water without getting water inside any of your empty egg cups.
- Divide ingredients of choice amongst your egg cups.
- Using a ladle, fill egg cups until almost full with beaten eggs or egg whites.
- Bake in the oven for 60 minutes or until eggs are set and puffed up, We cover the eggs with tinfoil sometimes because my husband thinks the eggs cook faster. Regardless, if you decide to use tinfoil sprayed with a little cooking spray remove it at about the 40 minute mark so you can see when your eggs are cooked.
- Remove egg bites from molds once cool enough to eat serve and enjoy!
Instant Pot Instructions
- Grease silicone tray with cooking spray.
- Pour a cup of water on the bottom of your instant pot.
- Cover your silicone egg mold with tinfoil. Lower into your instant pot carefully.
- Set instant pot to steam, make sure valve is closed, and set your timer for 8 or 9 minutes.
- Allow a natural release for 10 minutes and then quick release to get rid of extra steam left inside.
- Remove mod from instant pot and allow to cool. CAREFULLY remove tinfoil. Your eggs will be hot.
- Turn onto paper towel lined plate and serve immediately or cool and freeze. Egg bites will also last in your fridge for up to four days.
Notes
- I have made this recipe using a muffin pan and I have to say the results were pretty good. I still recommend purchasing a silicone mold but a muffin pan will definitely do the trick.
- These egg bites are so darn good and they deserve to be served with some equally delicious breakfast finger foods. Something that will highlight the bites' goodness but be able to stand up on their own. Your day will start off right as you go out to face the world!
