Ingredients

  • ½ cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ cup Greek yogurt
  • ¼ cup milk
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons cocoa powder
  • 2 teaspoons Red food coloring

Icing

  • 2 cups powdered sugar
  • cup heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Using an electric mixer, cream the butter and sugar in a large mixing bowl until light and fluffy.
  3. Whip in the eggs, vanilla extract, yogurt and milk.
  4. Whisk together the flour, baking soda, baking powder, and salt in another bowl.
  5. Mix the dry ingredients into the wet.
  6. Separate the batter into two more or less equal portions. Add the cocoa powder and red food coloring to one portion of the batter.
  7. Add the two batters alternately to a parchment-lined loaf pan. Then, Using a butter knife, swirl the batters together.
  8. Bake for 30-45 minutes or until a toothpick inserted comes out clean. Set aside to cool completely.
  9. Whisk together the powdered sugar, heavy whipping cream, and vanilla extract to make the icing.
  10. Pour the icing over the loaf.
  11. Remove from pan and slice to serve.

Notes

  • Some red coloring has a slight aftertaste. Make sure you use food coloring labeled "no taste red."
  • If you notice the top of your loaf is browning too quickly, create a tent out of aluminum foil and loosely cover it. This will prevent it from burning while still allowing the inside to cook through.
  • You can also make a cream cheese frosting if you prefer.
  • You can make this as cupcakes. Just divide the batter evenly into a lined cupcake tin and bake for 18-20 minutes until a toothpick inserted into the center comes clean.
