Description

  • 8 lices Bacon chopped, thick cut
  • 1 yellow onion , diced
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper coarse ground
  • 1 prig thyme fresh
  • 4 cups chicken broth
  • 4 yukon potatoes , diced
  • 4 cups sweet corn
  • 2 cups half and half , room temperature

Instructions

  1. Add the bacon to a large Dutch oven on medium heat, cook until crisp, then remove the bacon. Reserve about two tablespoons of bacon fat in the pan and drain the rest.
  2. Add the onions to the pot with the reserved bacon fat and cook for 2-3 minutes until just softening.
  3. Add the salt, pepper, thyme, broth, potatoes, and corn to the onions and bring to a boil
  4. Reduce to a simmer and cook for 20 minutes until the potatoes are fork tender.
  5. Remove the pot from the heat and stir in the half and half.
  6. Serve topped with the bacon crumbles.
