This colorful Corn Salad is perfect for all your summer BBQ's. It is made with fresh corn and loaded with flavor. Mix with a simple dressing to make this salad so delicious.

Ingredients

Servings

For the Salad:

  • 3 cups corn kernels 4 Corn on the Cobs
  • 1 cup cherry tomatoes quartered
  • 1 small cucumber peeled and diced
  • 1/2 red onion diced
  • 2 Tablespoons fresh basil chopped
  • 1 Tablespoon fresh parsley chopped
  • 1/4 cup feta cheese crumbled

For the Dressing:

  • 1/4 cup olive oil
  • 2 Tablespoons red wine vinegar
  • 1 lemon juiced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Whisk together the dressing ingredients in a small mixing bowl.  Refrigerate while you prepare the salt ingredients.
  2. Boil the corn in a large pot of water for approximately 3 minutes.  Once the corn has cooled, remove the kernels from the corn.  Place the kernels in a large bowl.
  3. Stir in the remaining salad ingredients.
  4. Pour the dressing mixture over the salad.  Gently toss the ingredients to coat with the dressing.
  5. Serve cold and enjoy!

Notes

  • This salad is best served within 2 hours of stirring in the dressing mixture.
