Corn with Chili Lime Butter

Oven roasted corn with chili lime butter. The sweet corn and spicy butter makes the perfect summer side dish.

Ingredients

  • 10 ears corn with husks, fresh sweet

Chili Butter

  • 1/2 cup butter softened, salted
  • lime zest and juice of 2
  • 2 teaspoons ancho chili pepper
  • 1 teaspoon chipotle pepper
  • 4 garlic minced, cloves
  • 1/4 cup cilantro for garnishing, optional, freshly chopped

Instructions

  1. Preheat the oven to 350ºF. Place the corn (with husks) on the baking sheet.
  2. Bake on the center rack for 45 minutes or until the corn is tender.
  3. Allow the corn to cool for 5 minutes.
  4. In a small bowl, combine the butter, lime zest and juices, seasonings and garlic. Mix well.
  5. Peel back the husks on the corn and use a pastry brush to brush the butter over the warm corn.
  6. Garnish with freshly chopped cilantro, if desired.
