Description

Cornflake Cookies start with a dough made from flour, oats, butter, brown sugar, egg, and vanilla, providing a flavorful and slightly chewy base. Optional additions like chopped pecans and chocolate chips introduce contrasting textures and complementary flavors.

  • 1.25 c flour
  • 1 c oats quick cooking
  • ¼ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ c butter
  • 1 c brown sugar
  • 1 egg well beaten
  • 1 tsp vanilla
  • c corn flakes

Optional:

  • 1/2 c pecans chopped
  • 1/2 c chocolate chips

Instructions

  1.  Preheat the oven to 375˚F.
  2. Sift together flour, baking powder, baking soda, and salt, then stir in the oats.
  3. Cream butter, add sugar gradually. Mix until light. Add beaten egg and vanilla. Mix thoroughly.
  4. Add flour mixture and stir until combined. Stir in chocolate chips and nuts if desired. Last, lightly stir in corn flakes.
  5. Using a cookie scoop, scoop the dough and drop on cookie sheet 2 inches apart. Bake for 10-12 minutes or until the edges are golden brown and the centers are set.  Cool for 2 minutes on the cookie sheet, then move to a cooling rack.

Notes

  • Store leftover cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
  • Freezing maintains cookie freshness better than room temperature storage over longer periods.
