  • 8 tbsp butter melted, unsalted
  • 6 tbsp canola oil or avocado oil
  • 2 cups granulated sugar
  • 1 cup cocoa powder unsweetened
  • 4 egg room temperature, large
  • 1/2 tbsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all-purpose flour

Ganache

  • 1/2 cup heavy whipping cream
  • 8 oz semisweet chocolate

Topping

  • 4 tbsp candy chips Rainbow brand

Instructions

  1. Preheat the oven to 350°F. Line a 9x13 inch baking dish with parchment paper that overhangs slightly on the sides. This will make it easier to lift the brownies out of the pan for slicing and serving.
  2. In a large bowl, mix together the melted butter, oil, and sugar with an electric hand mixer on medium speed until well combined.
  3. Add the cocoa powder and beat until incorporated. Add the eggs, vanilla, and salt. Mix until smooth.
  4. Add the sifted flour and mix until just combined. Pour the batter into the prepared baking dish and smooth it into an even layer.
  5. Bake the brownies for 27-32 minutes, or until a toothpick inserted comes out clean with a few moist crumbs. Remove the pan from the oven and allow the brownies to cool completely.
