  • 8 oz brown lentils
  • 18 oz water
  • 1 medium onion
  • 1 talk celery preferably with leaves
  • ½ tsp salt
  • tsp black pepper (optional)
  • 2 Tbsp extra virgin olive oil or more

Instructions

  1. Sort and rinse the lentils, removing any dirt or bad quality beans.
  2. Place lentils in a large pot and add the water.
  3. Dice the onion, and chop the celery, then add to the pot, and turn the burner to medium high. Stir and bring the contents to a boil, then lower the heat and simmer while stirring occasionally.
  4. Remove the casing on the cotechino if it is removable.
  5. Add the cotechino and continue to simmer for about 15 to 20 more minutes, or until the lentils are cooked. See notes below.
  6. Taste and season as desired, remove the cotechino, and cut into slices.
  7. Ladle the lentils onto a serving dish (or directly onto plates), drizzle with extra virgin olive oil and top with cotechino slices and serve.

Notes

  • Homemade cotechino can be prepared separately using the referenced recipe or a store-bought cotechino can be used according to package instructions.
