Description

The recipe begins with cooking Italian chicken sausage casings removed, crumbled and browned in a skillet. Meanwhile, eggs are whisked together with cottage cheese, grated Pecorino Romano, chopped baby spinach, kosher salt, and freshly ground black pepper, forming the custard base for the bake. Once the sausage is cooked through, the egg mixture is poured over and briefly cooked on the stovetop to start setting the edges.

Transfer to a 350°F oven to bake until the frittata's top is fully set, about 16 to 18 minutes. The baked frittata will have a firm texture with pockets of creamy cheese and tender greens throughout. The saltiness from the Pecorino and sausage balances the mildness of cottage cheese and spinach.

  • 1 Italian chicken sausage casings removed, link
  • 8 egg large
  • 1/2 cup cottage cheese I love Good Culture, 1% fat
  • 1/2 cup Pecorino Romano cheese grated, or Parmesan cheese
  • 1 cup baby spinach chopped
  • 3/4 teaspoon kosher salt
  • black pepper freshly ground

Instructions

  1. Preheat oven to 350 degrees F.  Move oven rack to the second highest from the top.
  2. Lightly spray a 10-inch oven safe skillet with cooking spray.
  3. In a medium bowl, whisk eggs, cottage cheese, Pecorino, spinach, salt and pepper. Set aside.
  4. Add sausage to a skillet, breaking it up in small pieces with a wooden spoon over medium heat and cook, until browned and cooked through, about 4 minutes.
  5. Add the egg mixture to skillet and cook 1 minute to let the bottom set.
  6. Bake in the oven until the top is set, about 16 to 18 minutes.
  7. With a spatula, carefully slide frittata out of the skillet onto a cutting board and cut into 4 wedges.
  8. Serve with salad and whole grain bread, if desired.
