Cottage Cheese Egg Bake (Frittata)
Description
The recipe begins with cooking Italian chicken sausage casings removed, crumbled and browned in a skillet. Meanwhile, eggs are whisked together with cottage cheese, grated Pecorino Romano, chopped baby spinach, kosher salt, and freshly ground black pepper, forming the custard base for the bake. Once the sausage is cooked through, the egg mixture is poured over and briefly cooked on the stovetop to start setting the edges.
Transfer to a 350°F oven to bake until the frittata's top is fully set, about 16 to 18 minutes. The baked frittata will have a firm texture with pockets of creamy cheese and tender greens throughout. The saltiness from the Pecorino and sausage balances the mildness of cottage cheese and spinach.
After baking, the frittata is carefully removed from the skillet and cut into wedges. It serves well warm for breakfast or brunch, and can be complemented with a fresh salad or whole grain bread for a complete meal.
