Courgette Curry
Description
In this Courgette Curry, neutral cooking oil is warmed to release the fragrance of cumin seeds and finely chopped garlic. Onions are sautéed until golden and softened, providing a flavorful base. Tomatoes are then cooked down, integrating with seasonings including salt, turmeric, and chili powder. The spices are gently cooked in water to prevent burning and to develop their color and aroma before bite-sized courgette chunks are added.
The courgettes are covered and slowly simmered for 15 to 20 minutes until they reach a tender consistency, absorbing the spiced tomato and onion mixture. Fresh coriander is stirred in at the end for a final herbaceous note.
This curry is a light yet flavorful addition to the meal, especially when served alongside fresh homemade chapatti bread. The blend of spices and vegetables makes it suitable for a vegetable-centric plate. It’s a practical dish to prepare with fresh produce and pantry spices.
Ingredients
- 50 ml neutral cooking oil generic cooking oil
- 4 garlic FInely chopped, cloves
- 1 tsp cumin seeds Jeera
- 1 onion
- 2 tomato
- 1 tsp chilli powder
- 1 tsp salt
- 1 tsp turmeric powder Haldi
- 700 g courgette
- Coriander
- 50 ml water
Instructions
- Heat up the oil on medium heat until hot
- Add the cumin seeds and finely chopped garlic then sauté for 1-2 minutes until fragrant
- Add the finely diced onion and cook for 4-5 minutes on medium heat until softened and lightly browned
- As the onions are cooking dice the tomatoes then add into pan and cook for another 3-4 minutes until softened
- Add the salt, chilli powder, and turmeric powder then cook the spices for 2-3 minutes before adding the water and cooking for a further 2-3 minutes – the water allows the spices to release their colour and prevents the spices from burning
- As the spices are cooking peel and chop the courgettes into bite-sized chunks then mix into the spices before covering and cook for 15-20 minutes until soft
- Add the finely chopped coriander then mix
- Serve with homemade chapatti and enjoy!
