Description
Courgette, Mint and Feta Frittata starts by sautéing thinly sliced courgette (zucchini) and diced shallots in olive oil until tender. Separately, eggs are whisked with whole milk, salt, pepper, chopped fresh mint, and crumbled light feta cheese. This egg mixture is poured over the cooked vegetables in an ovenproof pan and gently cooked on the hob for several minutes.

Ingredients
- 1 tablespoon olive oil
- 2 zucchini thinly sliced, aka courgette
- 2 shallot diced
- 8 egg
- 1 teaspoon milk whole
- 1 pinch sea salt
- 1 pinch black pepper
- 20 g mint chopped, fresh
- 60 g feta cheese crumbled, light
- 30 g feta cheese crumbled, light
Instructions
- Heat 1 tablespoon Olive oil in an ovenproof pan and then add 2 Courgette (zucchini) and 2 Shallots and gently cook for 3-4 minutes.
- In a large bowl, whisk together 8 Eggs, 1 teaspoon Whole milk and 1 pinch Sea salt and ground black pepper. Add 20 g Fresh mint and 60 g Light Feta.
- Pour the egg mixture into the pan. Heat on the hob for 3-4 minutes and then put under a preheated grill for around 4-5 minutes, until the eggs are set. Sprinkle with 30 g Light Feta and some extra mint and serve
Notes
- Adjust egg amount based on frying pan size; use fewer eggs for smaller pans.
- Ensure to use an ovenproof pan to allow finishing under the grill safely.
- For a more attractive presentation, reserve half the cooked courgettes and add them on top before grilling.
