Couscous
Description
The Couscous is prepared by bringing the stock to a boil and pouring it over the couscous in a heatproof bowl, which is then covered and left to steam for about 10 minutes. This hydrates the grains evenly without stirring. After resting, the couscous is fluffed with a fork to separate the grains, preventing clumping and producing a light, airy texture.
Extra virgin olive oil, lemon juice, and salt are stirred in to add richness, brightness, and seasoning. The dish can be customized by folding in finely chopped fresh coriander and parsley for a fresh herbal note, or dried fruits like apricots and currants plus toasted almonds to add texture, sweetness, and nutty flavor. This makes the couscous adaptable to various Middle Eastern or North African meals.
The recipe notes highlight that liquid ratios differ by brand, so adjustments can be made to achieve preferred firmness. This couscous keeps warm well and pairs ideally with tagines or other spiced dishes.
Ingredients
- 2 cups couscous
- 2 cups chicken stock low sodium, or vegetable stock
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
Herb option:
- 2 tbsp Coriander finely chopped, or cilantro
- 2 tbsp parsley , finely chopped
Fruit and nuts:
- 1/3 cup dried apricot chopped
- 1/3 cup currant or sultana
- 2 tbsp almonds toasted, slivered
Instructions
- Heat chicken stock until boiling using whatever method you choose (stove, 3 - 4 minutes in microwave on high).
- Pour over couscous in a heatproof bowl. Shake to level the couscous, cover with plate (or cling wrap).
- Leave for 10 minutes, then fluff with fork. Stir through olive oil, lemon juice and salt.
- Stir through either herbs or fruit & nuts. Or as I do, use it all! Keep warm until ready to use. Ideal served with Tagine, or anything Middle Eastern.
Notes
- Use the liquid to couscous ratio recommended on your couscous package, commonly 1:1.
- If the couscous is too firm, add additional hot liquid and let it soak to soften further.
