Couscous with Sun-Dried Tomato and Feta
Description
Couscous with Sun-Dried Tomato and Feta begins by toasting pine nuts in a dry pan until golden, which adds a warm, nutty aroma and crunchy texture. The couscous is then cooked by steeping in boiling water with olive oil and kosher salt, ensuring a light, fluffy grain base.
After fluffing the couscous, sun-dried tomatoes in oil are mixed in, imparting a concentrated tomato flavor and slight chewiness. Crumbled feta adds a creamy, salty contrast while chopped green onions contribute freshness and mild pungency. The toasted pine nuts finish the dish with added texture and nuttiness.
This dish can be served warm or at room temperature. It works well as a side for grilled meats or as a vegetarian main when paired with salad or vegetables.
Ingredients
- ⅓ cup pine nuts shelled
- 1 tablespoon olive oil
- ½ teaspoon kosher salt
- 1 ½ cup couscous
- ⅓ cup sun-dried tomato in oil, drained and diced
- ⅓ cup feta cheese crumbled
- ¼ cup green onion chopped
Instructions
- In a dry, non-stick fry pan over medium-high heat, toast the pine nuts, tossing often, until golden brown, about 3-4 minutes. Be sure to watch them closely as they can burn quickly once they get hot. Set aside.
- In a medium saucepan, bring 1 ¼ cup water to a boil. Stir in the couscous, olive oil and kosher salt, cover, and remove from the heat. Let stand for 5 minutes.
- Fluff the couscous with a fork and stir in the sun dried tomatoes, feta cheese, chopped green onion, and pine nuts. This dish can be served warm or at room temperature.
