Cowboy Beans
Description
This Cowboy Beans recipe starts by crisping chopped bacon, which imparts smoky flavor and grease to cook onions until tender. Garlic and ground beef added to the pot are browned and crumbled, creating a savory base. Excess grease is drained to avoid greasiness.
Then, multiple beans—pork and beans, cannellini, and kidney beans—are combined in the pot along with the cooked bacon. The sauce ingredients—barbecue sauce, ketchup, brown sugar, yellow mustard, Worcestershire sauce, and apple cider vinegar—are added and gently mixed. Baking the mixture in the oven helps meld the flavors and thicken the sauce, resulting in a rich, slightly sweet, tangy, and smoky bean casserole.
Serve Cowboy Beans as a side to grilled meats or barbecue dishes, or enjoy them on their own as a hearty vegetarian-adjusted stew if omitting meat options. The baking step deepens the flavor and softens the bean texture for a comforting dish suitable for gatherings.
