  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups corn thawed, frozen
  • 2 cups cheddar cheese grated
  • 26 ounces tater tots

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Cook 1 pound lean ground beef in a large frying pan over medium-high heat until only a little pink remains. Add 1 medium minced onion and 3 minced garlic cloves and continue to cook for 5 more minutes.
  3. Mix 1 (14-ounce) can diced tomatoes and 1 cup sour cream into the beef then season with 1 teaspoon salt and 1 teaspoon pepper.
  4. Pour the beef mixture into a 9 x 11-inch casserole dish. Top with 2 cups frozen corn, then 2 cups grated cheddar cheese, then arrange 26 ounces tater tots in a single layer on the top.
