  • 1 cup butter softened, unsalted
  • 3/4 cup sugar
  • 3/4 cup brown sugar , packed
  • 2 large egg
  • 2 teaspoons vanilla extract
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups rolled oats
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup coconut shredded
  • 1/2 cup pecans , chopped

Instructions

  1. Preheat oven to 350 degrees and to your stand mixer add the butter, sugar and brown sugar on medium speed until light and fluffy, about 1-2 minutes.
  2. Add in the eggs and vanilla until fully combined then sift the flour, baking powder, baking soda and salt together and add it into the stand mixer on low speed until just combined.
  3. Add in the oats, chocolate chips, coconut and pecans until just combined.
  4. Add 2 tablespoon sized scoops of dough to your baking sheets and bake for 12-13 minutes, letting them cool before removing from the baking sheets.
