Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup butter softened
- 3/4 cup sugar
- 1 cup brown sugar packed down
- 2 egg
- 1 teaspoon vanilla extract
- 2 cups rolled oats
- 1 cup semisweet chocolate chips
- 1/2 cup coconut shredded, sweetened
- 1/2 cup pecans coarsely chopped
Instructions
- Preheat oven to 325°F (175 degrees C).
- Sift flour, baking powder, baking soda, cinnamon, and salt in a bowl and set aside.
- In a separate bowl or stand mixer, cream butter, white sugar, and brown sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and stir until combined.
- Gradually stir in your sifted ingredients. Add rolled oats, coconut, pecans, and chocolate chips and stir until just combined.
- Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets.
