  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 3/4 cup sugar
  • 1 cup brown sugar packed down
  • 2 egg
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup coconut shredded, sweetened
  • 1/2 cup pecans coarsely chopped

Instructions

  1. Preheat oven to 325°F (175 degrees C).
  2. Sift flour, baking powder, baking soda, cinnamon, and salt in a bowl and set aside.
  3. In a separate bowl or stand mixer, cream butter, white sugar, and brown sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and stir until combined.
  4. Gradually stir in your sifted ingredients. Add rolled oats, coconut, pecans, and chocolate chips and stir until just combined.
  5. Using a cookie scoop or spoon, drop by teaspoonfuls onto greased baking sheets.
