Cowboy Stew

Cowboy Stew is a robust mix of ground beef, smoked sausage, vegetables, and spices simmered slowly in chicken stock. The stew combines hearty textures from baby potatoes and mixed vegetables with a smoky, spiced flavor from cumin, chili powder, and smoked sausage. This one-pot meal offers warmth and filling satisfaction, making it suitable for comforting dinners.

Description

Cowboy Stew brings together lean ground beef and slices of smoked sausage cooked with garlic and onion, then combined with baby potatoes, canned pinto beans, corn, diced tomatoes, green chiles, and frozen mixed vegetables. The stew is seasoned with cumin and chili powder, contributing a mild smoky heat that enhances the layered flavors. Slow cooking allows the potatoes to soften and the flavors to meld into a cohesive, savory dish.

The stew is finished when the potatoes are tender, yielding a chunky texture with tender meat and vegetables in a flavorful broth. It can be served on its own as a hearty bowl or with crusty bread for dipping. The combination of ingredients gives nutritional variety and makes it a complete meal.

This recipe relies on canned and frozen ingredients for convenience, and slow cooking maximizes flavor development with minimal active effort. Adjust seasoning to taste or vary the vegetables based on availability.
