Crab Fried Rice

Crab Fried Rice combines cooked white rice with tender lump crabmeat, scrambled eggs, and fresh vegetables like carrots and green onions. The rice is stir-fried with garlic and a mix of soy sauce, oyster sauce, and seasoning, creating a savory, slightly sweet dish with a hint of crispiness from frying. It is garnished with Thai basil and extra green onions, adding fresh herbal notes. This recipe uses straightforward ingredients and a method that balances the delicate crab flavor with the richness of the sauces, making it suitable for a light lunch or dinner dish.

Description

The Crab Fried Rice recipe starts with cooked and cooled white rice mixed with lump crabmeat and vegetables such as shredded carrot and green onions. The garlic and onions are sautéed first for aroma and flavor, then the vegetables are stir-fried briefly. Beaten eggs are scrambled within the pan before adding the rice, which is mixed with soy sauce, oyster sauce, salt, pepper, and sugar for balanced seasoning. The crab is gently folded in, and the rice is allowed to crisp lightly on the bottom through repeated stirring. The dish is finished with optional garnishes including Thai basil and green onions for a fresh finish.

The texture combines tender rice and crab with the slight crunch of vegetables, enhanced by the umami flavors from the oyster sauce and soy sauce. The method of stir-frying and letting the rice crisp slightly adds a pleasant contrast.

This crab fried rice offers a satisfying meal on its own or paired with simple sides. The combination of sauces and fresh ingredients makes it versatile for everyday cooking.

Ingredients

Servings
  • 3 cups white rice cooked and cooled
  • 1 cup crabmeat lump
  • 2 tablespoons vegetable oil (or olive or avocado or peanut oil)
  • 3 green onion thinly sliced
  • 2 garlic cloves, minced
  • ½ cup carrot shredded, or stir fry vegetables
  • 2 egg lightly beaten
  • soy sauce or fish sauce
  • oyster sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper ground
  • 1 teaspoon sugar
  • green onion optional, for garnishing
  • Thai basil optional, for garnishing

Instructions

  1. Heat oil in a large skillet or large wok over medium high heat. Add green onions and garlic. Saute for 1-2 minutes until fragrant.
  2. Add in the shredded carrots. Cook for 1-2 minutes. Push the vegetables to one side of the skillet.
  3. Pour the beaten eggs into the open space and scramble until just cooked - about 30 seconds. Incorporate the eggs with the vegetables.
  4. Add rice, sesame oil, soy sauce, oyster sauce, salt, pepper, and sugar. Stir-fry the mixture, ensuring the sauces are evenly distributed. Then, gently fold in the crabmeat. Let the bottom get crispy for 2 minutes. Stir, and repeat a couple of times.
  5. Transfer the crab fried rice to a serving dish. Garnish with Thai basil, green onions, and a squeeze of lime juice, if desired. Serve hot.
