Ingredients

  • cup mayonnaise plus more to taste
  • 1 teaspoon lemon juice fresh
  • 1 teaspoon white vinegar
  • 1 tablespoon dill minced fresh
  • ½ teaspoon Old Bay seasoning
  • ¼ teaspoon sugar
  • 1 lb. crab meat drained if necessary, any shells or cartilage removed, lump or jumbo lump, or other crab meat of choice
  • 1 celery finely diced, stalk
  • 2 green onion thinly sliced
  • salt to taste, kosher salt, freshly ground black pepper
  • black pepper to taste, kosher salt, freshly ground black pepper
  • 2 large ciabatta roll split in half (or use 4 English muffins or 4 large slices of hearty bread
  • 2 tablespoons butter softened, salted
  • 4 tomato optional, slices
  • 4 lices swiss cheese or gruyere or cheddar cheese
  • fresh parsley optional garnish, chopped

Instructions

  1. In a medium bowl, whisk together the mayonnaise, lemon juice, vinegar, dill, Old Bay, and sugar. Add the crab, celery, and green onion. Stir gently to combine. Taste and season with salt and pepper. Add extra mayo, if desired.
  2. Preheat the broiler. Line a large rimmed baking sheet with foil. Spread the butter on open face of each ciabatta roll half. Arrange the buttered rolls on the prepared baking sheet. Place the rolls about 6-inches from the broiler and toast until golden brown, about 3-5 minutes. Keep a close eye on them so that they don’t get too dark.
  3. Top each open-face roll with the crab salad. Add a tomato slice if desired. Top with cheese.
  4. Broil 6-inches from the heat until the cheese melts, about 2-3 minutes.

Notes

  • Adjust the number of sandwiches that you prepare to serve the size of your family. For instance, cut all of the ingredients in half to make 2 sandwiches. Similarly, you can double or triple the ingredients if you're entertaining or serving a larger group.
