Ingredients
- 2 lbs baby potatoes, halved or quartered
- 1 packet ranch dressing mix
- 1 cup shredded cheddar cheese
- ½ cup cooked bacon, crumbled
- ½ cup sour cream
- ¼ cup green onions, sliced
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- Prepare Potatoes:Preheat the oven to 400°F (200°C). Place the halved or quartered baby potatoes on a baking sheet.
- Season:Drizzle with olive oil, and sprinkle with ranch seasoning, salt, and pepper. Toss to coat the potatoes evenly.
- Bake:Bake the potatoes for 20-25 minutes until golden brown and tender. Stir halfway through to ensure even cooking.
- Top with Toppings:Once cooked, sprinkle the potatoes with shredded cheddar cheese, crumbled bacon, and green onions. Return to the oven for 5 minutes until the cheese melts.
- Serve:Top with a dollop of sour cream and serve warm.
Notes
- Make Ahead:Crack Potatoes can be assembled and refrigerated before cooking. Cook in the oven or slow cooker when ready to serve.
- Customizing the Flavor:For added richness, swap the sour cream for cream cheese. You can also add garlic powder or paprika for extra flavor.
- Serving Suggestions:These potatoes make a great side dish for steak, chicken, or grilled meats. Pair with a fresh salad for a complete meal.
- Storage Tips:Store leftover potatoes in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven.
