Crack Potatoes

Just like the name says, these crack potatoes are so good you’ll be addicted! It’s an easy, cheesy side dish that the whole family will love.

Ingredients

  • 8 ounces cream cheese, softened
  • 1 1/2 cups sour cream
  • 1 package dry ranch dressing powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound bacon cooked, chopped and divided
  • 3 cups cheddar cheese, shredded and divided
  • 30 ounces shredded hash brown potatoes

Instructions

  1. Preheat oven to 375 degrees Fahrenheit. Lightly spray a 9x13-inch pan with cooking spray.
  2. Chop the cooked bacon and save 1/4 cup for the top of the potatoes.
  3. In a large bowl, combine cream cheese, sour cream, 2 cups shredded cheese, cooked chopped bacon, ranch powder, onion powder, and salt and pepper. Mix together until combined.
  4. Stir in the frozen shredded hash brown potatoes and mix well. Spoon into the prepared pan.
  5. Sprinkle the shredded cheese on top of the potatoes. Cover with foil and bake for 40 minutes. Remove the foil then bake for an additional 5 minutes or until the cheese is melted and bubbly.
  6. Garnish with the 1/4 cup reserved chopped bacon, chopped green onions, or chopped parsley if you desire.
  7. Serve warm and enjoy!
