  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups dried cranberries
  • 1 1/2 cups dried coconut, sweetened, flaked

Instructions

  1. Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
  2. In a large bowl beat butter, sugar and vanilla together until creamy and smooth.
  3. In a seperate bowl, whisk together the flour, baking powder, and salt. Add to the butter mixture and mix on low speed until the dough comes together.
  4. Stir in dried cranberries and coconut flakes. Shape the dough into balls and place 2 inches apart on the cookie sheets. Bake 8-11 minutes. Cool on baking racks.
