  • 1 cup dried cranberries or fresh cranberries, chopped
  • ¼ cup sugar for sprinkling, optional, coarse

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Prepare the dough:

  1. In a medium bowl, whisk together the flour, baking soda, salt, and lemon zest. Set aside.
  2. In a large bowl, beat the softened butter and granulated sugar together until creamy and light, about 2-3 minutes.
  3. Add the egg, vanilla extract, and lemon juice, and beat until well combined.

Combine dry and wet ingredients:

  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  2. Gently fold in the dried cranberries.

Shape the cookies:
