  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder

  • 2 egg
  • 1 cup light cream
  • ½ cup vegetable oil
  • 1 tablespoon lemon zest
  • 1 ½ cups cranberries frozen
  • sugar coarse, for sprinkling on top

Instructions

  1. Preheat oven to 400F.
  2. Line a muffin tin with paper liners.
  3. In a large bowl whisk together the flour, sugar, baking powder and salt.
  4. Add the eggs, milk, oil, and lemon zest and mix well.
  5. Fold in the cranberries.
  6. Scoop the batter into the paper-lined muffin tins filling about ¾ full.
  7. Sprinkle with coarse sugar.
  8. Bake for 18-20 minutes.
  9. Place on a wire rack to cool.
