Cranberry Orange Bread Pudding

This Cranberry Orange Bread Pudding combines cubed day-old bread soaked in a spiced custard with fresh cranberries and bright orange zest. The baked pudding has a tender, custardy texture with a slightly crisp top and a balance of tart fruit flavor. A sweet orange glaze drizzled on top combines powdered sugar, butter, and fresh orange juice to complement the warm spices and citrus notes, making it ideal for a comforting dessert or festive brunch.

Description

Cranberry Orange Bread Pudding uses cubes of firm bread, layered with fresh cranberries and soaked in a mixture of eggs, milk, sugar, and warm spices like cinnamon, cloves, and allspice. Orange zest is added to the custard and to the glaze, emphasizing a bright citrus flavor that balances the tartness of the cranberries. After soaking, the pudding is baked until the custard is set but still slightly jiggly in the center, with a golden and slightly crisped surface.

The texture is creamy and soft inside with pockets of tart berries throughout, creating a pleasant contrast between smooth custard and chewy bread. The warm spices add depth without overpowering the fresh fruit and orange notes.

Serving this bread pudding warm with the orange glaze drizzled on top enhances its citrus flavor and sweetness. It works well as a dessert after dinner or as a special breakfast or brunch dish. Leftovers can be reheated gently and still provide comfort food appeal.

Ingredients

Servings
  • 4 cups milk
  • 6 egg
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp allspice
  • 1 cup granulated sugar
  • 2 Tbsp orange zest
  • 1 1/4 cups cranberries fresh
  • 1 bread cubed (day old/crusty bread is best; I used brioche, loaf thick
  • 3 Tbsp butter melted
  • 1-1 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 2 Tbsp orange juice freshly squeezed
  • 1 tsp orange zest optional--it makes the glaze extra orange-flavored!

Instructions

  1. Preheat oven to 350 degrees and grease a 13x9 baking dish.
  2. Spread half of the bread in an even layer on the bottom of the baking dish. Sprinkle cranberries over the top. Place the remaining bread on top.
  3. In a bowl, whisk together eggs, milk, vanilla extract, cinnamon, cloves, allspice, sugar, and orange zest until well combined.
  4. Pour the egg mixture over the bread, making sure all of the bread is covered.
  5. Allow the bread pudding to sit for 25 minutes.
  6. Bake for 45-50 minutes, or until the top is golden brown and the center jiggles only slightly when moved.
  7. Allow to cool at least 10 minutes before serving. (The bread pudding might deflate a bit while cooling; this is normal.)
  8. While the cranberry orange bread pudding is cooling off, mix together melted butter, powdered sugar (starting with 1 cup), vanilla extract, orange juice, and orange zest. If the glaze seems too thin, add in the last 1/2 cup of powdered sugar.
  9. Drizzle over each slice of bread pudding.
  10. Enjoy!
