Cranberry Orange Cake

The Cranberry Orange Cake blends fresh cranberries and bright orange juice and zest into a moistly textured layered cake. It uses a combination of baking soda and powder for lift and a sour cream and oil base to keep crumb tender. The cake is topped with an orange cream cheese frosting that adds richness and an extra orange flavor layer, complementing the tart cranberries throughout.

Description

This recipe creates a cranberry studded cake made with flour, sugar, baking soda, baking powder, salt, neutral oil, fresh orange juice and zest, eggs, and sour cream for moisture and tender crumb. The cranberries are flour-coated before folding in to prevent sinking during baking. The cake is baked in two or three pans and tested with a toothpick for doneness before cooling.

Orange Cream Cheese Frosting is prepared by creaming softened butter and cream cheese, then adding powdered sugar, orange zest, and fresh juice for brightness. This frosting is spread over the cooled cake layers to infuse a creamy tang that pairs well with the tart berries and citrus notes in the cake itself.

Serve this cake sliced as a dessert or treat with a balance of citrus tartness and creamy sweetness from the frosting. It works well for celebrations or afternoon sweet breaks.

Ingredients

Servings

Cranberry Orange Cake:

  • 2 1/2 cups flour
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 cup neutral cooking oil such as canola oil, generic cooking oil
  • 1 cup orange juice fresh
  • 3 large egg
  • 1 cup sour cream (preferably full-fat)
  • 1-2 teaspoons orange zest
  • 1 1/2 cups cranberries cut in half, fresh

Orange Cream Cheese Frosting:

  • 1 cup butter (softened)
  • (1) ounce pkg. cream cheese (softened)
  • 4 cups powdered sugar
  • 1 teaspoon orange zest
  • 2 Tablespoons orange juice fresh

Instructions

  1. Preheat oven to 350 degrees. In a large mixing bowl, stir flour, sugar, baking soda, baking powder, and salt.
  2. In another mixing bowl, cream oil, orange juice, eggs, sour cream, and orange zest until completely mixed.
  3. Fold in dry ingredients, mixing only until combined. Cut cranberries and toss in a bowl of flour (this helps to keep them from sinking to the bottom of the cake). Fold in cranberries. Pour into greased (3) 8-inch or (2) 9-inch cake pans.
  4. Bake for 19-22 minutes, depending on the size of pan used. To test if the cakes are done, insert a toothpick in the center of the cake. If it comes out clean, the cakes are done. Let cool for 15 minutes before removing from pans.

Orange Cream Cheese Frosting:

  1. In a large mixing bowl, cream together butter and cream cheese for 4 minutes until light and fluffy. Scrape down sides of the bowl halfway through mixing. Stir in powdered sugar, orange zest, and orange juice.
  2. Once cakes are cooled, frost with orange cream cheese frosting.
