Description

Separately, heavy whipping cream is combined with powdered sugar and whipped until stiff peaks form. The whipped cream is folded gently into the cooled cranberry mixture, creating a light, creamy texture that balances the tartness of the berries and jelly.

The combined salad is spread into a bowl and refrigerated for at least two hours or overnight to set fully, allowing the gelatin to firm up and the flavors to meld. It can be garnished with additional whipped cream and sugared cranberries for presentation.

  • 1 package raspberry gelatin dessert 3 ounces or 85g
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Bring cranberries, sugar, orange juice, and lemon juice to a boil. Simmer 7-8 minutes or until the cranberries pop and are cooked. Remove from heat and stir in Jello. Cool completely.
  2. Combine heavy cream and powdered sugar in a bowl. Whip until stiff peaks form.
  3. Fold the cream into the cranberry mixture.
  4. Spread into a bowl and refrigerate until set, at least 2 hours or overnight.
  5. Garnish with whipped cream and sugared cranberries if desired.

Notes

  • Store leftovers covered in the refrigerator for up to three days to maintain freshness.
