Cranberry Salad
Description
This Cranberry Salad begins with fresh or frozen cranberries cooked with granulated sugar, orange juice, and fresh lemon juice until the berries burst and soften. After removing from heat, raspberry gelatin dessert powder is stirred in, then the mixture is cooled completely.
Separately, heavy whipping cream is combined with powdered sugar and whipped until stiff peaks form. The whipped cream is folded gently into the cooled cranberry mixture, creating a light, creamy texture that balances the tartness of the berries and jelly.
The combined salad is spread into a bowl and refrigerated for at least two hours or overnight to set fully, allowing the gelatin to firm up and the flavors to meld. It can be garnished with additional whipped cream and sugared cranberries for presentation.
This chilled salad is suitable as a refreshing accompaniment to meals, especially during holiday seasons, offering a balance of sweetness and tartness in a creamy format.
