Cranberry Walnut Cookies
Description
The cookie dough is created by creaming butter with brown and white sugars, then mixing in eggs, vanilla, and almond extract for complexity. Flour, baking powder, salt, and baking soda are combined separately before incorporation to achieve the right texture and rise. Coarsely chopped walnuts and chopped fresh cranberries are folded into the dough, adding distinctive nutty and tart fruit components.
After wrapping and refrigerating the dough for several hours or overnight, the dough is rolled into 1-inch balls, flattened, and baked at 375°F for 10 minutes until edges turn brown. This chilling period helps the dough firm up for easier shaping and improves flavor melding.
The resulting cookies are crisp on the outside with a tender crumb, featuring bursts of tart cranberry balanced by crunchy walnut pieces. These cookies are suitable for holiday baking or snacking where a combination of sweet, tart, and nutty is desirable.
The chopping method for cranberries and walnuts significantly affects texture; coarse knife chopping or pulsing in a food processor is recommended to avoid overly fine dicing.
