Ingredients
- 4 boneless skinless chicken breasts
- 8 oz cream cheese softened
- ½ cup cooked bacon crumbled
- 1 cup shredded cheddar cheese
- 1 cup crushed Doritos chips nacho cheese flavor
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon black pepper
- ½ teaspoon paprika optional, for extra flavor
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a bowl, mix together the softened cream cheese, crumbled bacon, and shredded cheddar cheese until well combined.
- Using a sharp knife, create a pocket in each chicken breast by cutting horizontally through the center, but not all the way through.
- Stuff each chicken breast with the cream cheese and bacon mixture.
- In a shallow dish, crush the Doritos chips into small crumbs and season with garlic powder, onion powder, black pepper, and paprika.
- Coat each stuffed chicken breast with the Doritos crumbs, pressing gently to ensure the coating sticks.
- Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side, just to get a golden crust.
- Transfer the seared chicken breasts to the prepared baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for a few minutes before serving.
Notes
- You can substitute the Doritos with any other chips you like, such as tortilla chips or even pretzels, for a different flavor.
- For a lighter version, use reduced-fat cream cheese and skip the searing step.
- You can add some diced jalapeños to the cream cheese mixture for a spicy kick.
- If you prefer a crispier crust, broil the chicken for the last 2-3 minutes of baking.
- Leftover chicken can be stored in the fridge for up to 3 days.
- Serve the chicken with a side of vegetables, salad, or rice to complete the meal.
- For extra cheesy goodness, sprinkle extra cheddar cheese on top during the last 5 minutes of baking.
- You can also make this recipe ahead of time and freeze the stuffed chicken breasts before baking for an easy meal later.
