Description
This recipe combines equal parts softened cream cheese and butter beaten with creme de menthe syrup or mint extract to achieve a creamy mint-flavored base. Gradually incorporating a large quantity of powdered sugar thickens the mixture to a firm dough that holds shape when piped or spooned onto parchment paper. Refrigerating the dollops allows them to set fully. Optionally, once firm, the mints can be dipped on one side in melted chocolate, which adds a slight bitterness and a firmer exterior after re-chilling.

Ingredients
- 8 ounces cream cheese softened
- 1/4 cup butter softened
- 2 pounds powdered sugar
- 2 Tablespoons creme de menthe syrup or 1 teaspoon mint extract
- chocolate chips optional, for dipping
Instructions
- In a large bowl, beat together the cream cheese, butter, and syrup.
- Gradually add in the powdered sugar until completely mixed in. Mixture will be really thick.
- Add the mix into a piping bag and pipe small dollops out on to a cookie sheet lined with parchment paper.
- Refrigerate to firm up.
Notes
- Keep the mints refrigerated to maintain firmness; serve chilled.
- Optionally dip one side of firm mints in melted chocolate, then chill again to set.
- Add food coloring to the mixture before piping if a colored appearance is desired for special occasions.
