Cream Cheese Frosting
Description
This cream cheese frosting uses softened full-fat cream cheese and unsalted butter beaten together to a smooth consistency. Gradually adding powdered sugar and flavoring with vanilla and salt yields a balance of sweetness and tang. The frosting is beaten just until combined to avoid overmixing, which can soften the texture. Additional powdered sugar can be incorporated incrementally to achieve the desired thickness for spreading or piping.
The frosting's creamy texture and mild tang make it versatile for a variety of cakes and cupcakes, enhancing sweetness without masking underlying flavors. It's best prepared with full-fat cream cheese blocks rather than whipped spreads to ensure smooth, non-grainy results. Softening both the butter and cream cheese before mixing helps achieve an even, lump-free frosting.
The frosting can be stored covered in the refrigerator to maintain freshness and prevent absorption of other odors. If chilled frosting is too firm, a small amount of heavy cream can be mixed in to soften it before use.
Ingredients
- 1/2 cup unsalted butter softened to room temperature, 1 stick
- 8 oz cream cheese softened to room temperature
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 5-7 cups powdered sugar plus more if needed
Instructions
- With an electric mixer in a large bowl, beat softened butter and cream cheese until well blended.
- Add powdered sugar gradually to the mix, salt, and vanilla. Beat until creamy. Stop to scrape the sides and bottom of the bowl with a spatula. Beat just until combined, not over-mixing.
- Check the post for tips. To make the frosting stiffer, add more powdered sugar, 1/2 cup at a time.
- Use to frost cupcakes and layer cakes.
Notes
- Use full-fat brick cream cheese for a smooth, creamy texture; avoid whipped or low-fat versions.
- Soften both cream cheese and butter to room temperature before mixing to prevent lumps.
- Do not overmix the frosting to avoid making it too runny; stop when smooth and creamy.
- Add powdered sugar gradually to adjust thickness as needed for spreading or piping.
- Cover frosting tightly when refrigerating to keep it fresh and prevent odor absorption.
- If refrigerated frosting is too firm, mix in a tablespoon of heavy cream to loosen before use.
