Cream Cheese Frosting
Description
Cream Cheese Frosting is made by whipping softened cream cheese and butter together to form a light and fluffy base. Powdered sugar is added along with vanilla extract and salt to create a sweet and slightly tangy frosting with a smooth texture. Whipping at different speeds thoroughly incorporates ingredients and ensures a lump-free consistency. This frosting is versatile enough to be spread on cakes, piped onto cupcakes, or chilled for future use.
The frosting’s balance of fat from butter and cream cheese provides a creamy mouthfeel with a subtle tang from the cream cheese. Its sweetness from powdered sugar complements the richness, resulting in a frosting that holds shape when whipped properly but can also be softened with a splash of milk if needed.
This frosting pairs well with various cake flavors and offers flexibility for texture adjustment. It can be made ahead of time and stored in the refrigerator or frozen, requiring brief re-whipping when thawed.
Ingredients
- 8 ounces cream cheese softened
- ½ cup unsalted butter softened
- 3 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch salt
Instructions
- Add the softened cream cheese and butter to a stand mixer with the paddle attachment and whip on high speed for 5-7 minutes or until it becomes light and fluffy.
- Pour in the sugar, vanilla, and salt and whip at low speed until incorporated and then turn the speed to high and whip until it is completely combined and smooth.
- Ice a cake, pipe onto some cupcakes, or chill until ready to serve.
Notes
- Allow cream cheese and butter to soften at room temperature for 1-2 hours before whipping for a smoother texture.
- For a stronger cream cheese flavor, omit the butter and use all cream cheese.
- Add 1 to 2 tablespoons of cornstarch during whipping to thicken the frosting for better shape retention.
- Sift powdered sugar before mixing to avoid lumps, especially when using hand beaters.
- If frosting is too thick, thin with a small amount of milk to reach desired consistency.
- Make ahead by preparing up to 3 days in advance; store covered in the refrigerator for up to 7 days or freeze for up to 3 months with re-whipping after thawing.
