Description
This frosting recipe begins by thoroughly mixing softened full-fat block cream cheese and butter until free of lumps and creamy. Confectioners sugar is added gradually, with high-speed mixing after each addition to lighten the texture. Vanilla extract is incorporated last for flavor. The resulting frosting is fluffy and spreadable, best applied to completely cooled cakes or cupcakes to prevent melting.
The frosting keeps well refrigerated in an airtight container for three to four days but is not suitable for freezing due to potential texture changes. Desserts topped with this frosting need to be refrigerated to prevent spoilage. Before use, chilled frosting can be brought to spreading consistency by mixing in small amounts of heavy cream. Alternatively, it can be thickened by adding more powdered sugar incrementally until desired thickness is achieved.
Ingredients
- 2 (8-ounce) packages cream cheese softened
- 1/2 /2 cup butter softened
- 3 cups confectioners sugar sifted
- 1 1/2 /2 teaspoons vanilla extract
Instructions
- Combine softened cream cheese and butter with a stand or electric mixer until well-combined and creamy, about 3 minutes. Make sure that the mixture is free of any lumps.
- Add confectioner's sugar, 1/2 a cup at a time. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting.
- Add in vanilla and beat until well-blended, light, and fluffy.
- Use to frost cakes or cupcakes that have been cooled completely. Store in the refrigerator.
Notes
- Use full-fat block cream cheese rather than tub-style for best texture and consistency.
- To adjust consistency, add heavy cream one tablespoon at a time to thin, or powdered sugar one tablespoon at a time to thicken the frosting.
- Store frosting in an airtight container in the refrigerator for up to 3 to 4 days; do not freeze as it will alter texture.
