Cream Cheese Sugar Cookies

Cream Cheese Sugar Cookies are tender cookies made with a blend of butter and cream cheese that gives them a soft, moist crumb. The dough, enriched with vanilla and balanced with cornstarch and baking powder, is rolled and cut into shapes before baking to a light golden edge. Once cooled, the cookies are adorned with a smooth cream cheese frosting that includes cornstarch for better crusting, making them easier to handle and decorate, with optional sprinkles adding a festive touch.

Description

This recipe crafts soft sugar cookies by combining butter and cream cheese, lending creaminess and moisture to the dough. The inclusion of cornstarch and baking powder helps achieve a delicate texture. After mixing, the dough is rolled to under half an inch thick, cut into shapes with cookie cutters, and baked at 350°F until lightly golden around the edges, ensuring a tender center.

Once cooled, the cookies receive a cream cheese-based frosting mixed with butter, powdered sugar, vanilla, and cornstarch. The cornstarch in the frosting helps it set with a slight crust, which makes it easier to transport or pack the cookies without smearing. Adding sprinkles is optional but offers a decorative touch for festive occasions or themes.

Baking times vary with cookie size and thickness; thinner or smaller cookies may bake faster, so watch closely to avoid overbaking.

Ingredients

Servings
  • ½ cup butter softened to room temperature, unsalted
  • 6 oz cream cheese softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1 egg large
  • 3 cups all-purpose flour
  • 1 teaspoon cornstarch
  • ¾ teaspoon baking powder
  • ¾ teaspoon salt

Cream Cheese Frosting

  • 6 Tablespoons butter salted, softened
  • 6 oz cream cheese softened
  • ½ tsp vanilla extract pure
  • 2 ¼ cups powdered sugar
  • 2 tsp cornstarch
  • Sprinkles for decorating, optional

Instructions

  1. Preheat oven to 350F (175C) and line two cookie sheets with parchment paper
  2. Combine butter and cream cheese and use an electric mixer (or stand mixer) to stir until creamy and well-combined.
  3. Add sugar and stir again until thoroughly combined.
  4. Stir in egg and vanilla extract.
  5. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt.
  6. Gradually add dry ingredients to wet until completely combined.
  7. Transfer dough to a clean surface that’s been generously dusted with flour. Working with just half of the dough at a time, transfer dough to surface and use your hands to form into a ball (add additional flour to the surface if it’s sticky).
  8. Use a rolling pin to roll dough to just under ½” thick. Use cookie cutters to cut into shapes and transfer to prepared baking sheets.
  9. Bake in 350F (175C) oven for 8-10 minutes* Allow to cool completely on baking sheet before covering with frosting.

Cream Cheese Frosting

  1. Once your cookies have cooled, prepare your frosting by combining butter, cream cheese, and vanilla extract. Use an electric mixer (or a stand mixer) to cream ingredients together until well-combined.
  2. Gradually (with mixer on low-speed) add powdered sugar until completely combined. Stir in cornstarch (make sure it's well incorporated into the frosting).
  3. Spread or pipe frosting over completely cooled cookies.

Notes

  • Baking time will vary depending on the cookie cutter size and dough thickness; smaller or thinner cookies require less baking time.
  • Adding cornstarch to the frosting helps it set with a slight crust, making the cookies easier to handle and transport without damaging the frosting.
