Cream Mushroom Potatoes
Description
This recipe starts with peeling and cutting medium potatoes into chunks, then boiling them in salted water until tender. Meanwhile, a mixture of mushrooms, chopped onions, and sliced carrots is sautéed in olive oil and seasoned with salt and pepper until softened and golden.
Heavy whipping cream is then added to the vegetables in the pan and brought to a boil to create a creamy sauce. The cooked potatoes are placed in an oven-safe dish, and the creamy mushroom mixture is poured over them. Baking at a low temperature of 200°F for about 15 minutes allows the flavors to meld and the sauce to gently thicken, producing a smooth, rich coating over the potatoes.
This dish serves well as a hearty side or vegetarian main, pairing nicely with roasted meats or green vegetables for a balanced meal.
