- 1 lb ground beef or Italian sausage
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 1 can 14.5 oz diced tomatoes, drained

- 1 ½ cups shredded Mozzarella cheese
- 1 cup grated Parmesan cheese
- 8 oz lasagna noodles broken into pieces
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- 2 tablespoon olive oil for sautéing
- Fresh parsley for garnish optional

Instructions
Cook the beef and onions:
- In a large pot, heat olive oil over medium heat. Add the ground beef (or sausage) and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
- Add the chopped onion and garlic and cook for an additional 2-3 minutes, until softened and fragrant. Season with salt, pepper, basil, and oregano.
Make the soup base:
- Add the chicken broth, diced tomatoes, and heavy cream to the pot. Stir to combine and bring to a simmer.
