Description
This sauce is made by warming butter and heavy cream together until just bubbling, then seasoning with white pepper and nutmeg to provide mild warming spices without overwhelming the palate. Adding freshly grated hard Italian cheeses creates a rich, cheesy base that melts smoothly into the warm cream. Mixing in an egg yolk quickly before the cheese melts fully helps thicken and emulsify the sauce, yielding a creamy texture ideal for coating cooked pasta evenly.
The sauce should be served immediately with hot pasta to maintain its smoothness and prevent separation. It's not suitable for reheating due to the egg yolk and cream base, which can curdle if warmed again.
Ingredients
- 1/2 pint heavy cream
- 4 tablespoons butter unsalted
- 1/4 teaspoon white pepper
- 1/4 teaspoon nutmeg
- 6 tablespoons cheese I used a blend of Parmesan, Romano, and Asiago, freshly grated
- 1 egg yolk
- 1/2 pound pasta cooked according to package directions
Instructions
- Heat a medium-sized skillet over medium heat. Add butter and cream into the skillet. Stir to blend together the melted butter and heavy cream.
- Add white pepper and nutmeg to the cream mixture. Stir to combine.
- When the sauce just begins to bubble, add cheese and stir in.
- Add 1 egg yolk and mix quickly.
- When the cheese has melted, turn off the heat and serve immediately with pasta.
Notes
- This sauce is best served immediately as it does not reheat well and can separate.
