Description
Creamy Asparagus Soup combines trimmed asparagus with butter-sautéed onion and garlic as the base. After simmering in chicken broth until the asparagus softens, the mixture is blended to a smooth consistency. Heavy cream and lemon juice are stirred in to mellow the flavors and add a subtle tang. The result is a balanced soup with a rich, velvety texture that maintains the green, vegetal notes of asparagus.
The preparation involves cooking the aromatics and asparagus gently, then pureeing until smooth, which creates a unified, creamy soup ideal for cooler days or as a refined starter. Adding Parmesan cheese at serving provides a complimentary sharpness and depth.
This soup can be stretched with additional vegetables like zucchini or celery to increase volume. For more texture, some cooked asparagus pieces can be reserved, chopped, and stirred back in after blending. To thicken the soup further, simmer uncovered to reduce it or incorporate potato flakes as a thickener.
Ingredients
- 1 ½ pounds asparagus trimmed and washed
- 1 tablespoon butter
- 1 small onion diced
- 1 clove garlic minced
- 2 ¼ cups chicken broth (not low sodium)
- salt to taste
- black pepper to taste
- ½ cup heavy whipping cream or to taste
- ½ teaspoon lemon juice fresh
- Parmesan Cheese for serving, optional, shredded
Instructions
- Cut asparagus into ½" pieces.
- In a large pot over medium heat, cook onion and garlic in butter until tender. Add asparagus and cook an additional 5 minutes.
- Stir in broth, salt & pepper. Cover and let simmer 10-15 minutes or until asparagus is softened.
- Using a hand blender, puree soup until smooth. Stir in cream and lemon juice.
- Taste and season with salt and pepper if needed.
Notes
- Additional vegetables such as zucchini or celery can be added to extend the soup.
- When pureeing hot liquids in a blender, leave the lid loose to avoid steam pressure buildup.
- To add texture, reserve some asparagus pieces before blending and stir them back into the soup.
- Thicken the soup by simmering it uncovered longer or mixing in potato flakes.
