Creamy Avocado Egg Salad
Description
Creamy Avocado Egg Salad combines mashed avocado with chopped cooked eggs, Greek yogurt (or sour cream or light mayonnaise as alternatives), fresh lemon juice, and minced herbs such as cilantro, parsley, dill, or chives for a fresh herbal note. Salt and freshly ground black pepper season the mixture to taste.
The avocado serves as a creamy base providing healthy fats and a buttery consistency, blending easily with the chopped eggs for a satisfying texture. The lemon juice brightens the flavors while the herbs add a fresh, mildly aromatic touch. This salad can be served on whole-grain toast or alongside toasted pita chips for a light, nutritious option.
Its balance of creamy avocado and eggs creates a versatile dish suitable for breakfast, lunch, or snack times.
