Creamy Black Beans Soup
Description
This soup starts by frying thick-cut diced bacon until crisp, which is set aside as a crunchy garnish. Onions and garlic sauté in the rendered bacon fat, adding sweetness and aroma. Cooked black beans combine with water, vinegar, Worcestershire sauce, smoked paprika, and seasoning, then simmer briefly. The mixture is blended until creamy, emphasizing a smooth, thick consistency.
Serving includes topping the soup with crispy bacon, a drizzle of olive oil, and fresh garnishes like lime wedges, parsley, jalapenos, or hot sauce. These elements add layers of flavor, brightness, and heat that complement the smoky, deep bean base.
The recipe supports using canned or cooked beans and adjusts the sofrito to garlic if preferred, providing flexibility. It's a comforting and hearty option for a meal or appetizer.
