  • 500 g (1lb) chicken thigh chopped into bite size pieces, boneless
  • 2 tbsp butter
  • 3 garlic crushed/minced, cloves
  • 1 cup heavy cream aka whipping cream
  • 1 tsp thyme dried
  • 2-3 cups broccoli sliced into small florets
  • 3/4 cup Parmesan Cheese grated
  • 1 tsp lemon juice
  • salt to taste
  • black pepper to taste
  • 500 g (1lb) pasta cooked + 1 cup cooking water reserved

Instructions

  1. Heat a large pan over high heat.
  2. Drizzle a few teaspoons of olive oil over the chicken then season with salt and pepper.
  3. Brown the chicken in the pan for a few minutes until the chicken is opaque white and starting to turn golden brown. Remove from the pan and set aside.
  4. Add the butter and garlic to the pan and allow to cook for 30 seconds.
  5. Pour in the cream and add the thyme and lemon juice. Bring to a simmer then add the chicken and broccoli to the pan. Partially cover and Allow to simmer for 5-7 minutes until the chicken and broccoli are cooked.
  6. Add the Parmesan and stir into the sauce. Season with salt and pepper.
  7. Toss in the pasta and add some of the reserved cooking water if necessary. You want the pasta to be well-coated in the cream sauce. Serve immediately.
