Ingredients

  • 2 tbsp butter/olive oil
  • 1 onion finely chopped
  • 3 garlic cloves crushed
  • 1 kg (2lb) broccoli
  • 2 tsp dried oregano
  • 2 medium potatoes peeled and chopped
  • 6 cups vegetable stock/vegetable broth
  • 2 cups baby spinach washed
  • 1 cup heavy cream
  • salt and black pepper to taste

  • Garlic bread grilled cheese

Instructions

  1. Start by trimming the stems of the broccoli and chopping finely along with the onion and garlic.
  2. Sauté the broccoli stems, onion and garlic in a large pot or Dutch oven set over medium-high heat in a knob of butter or a few tablespoons of oil until soft and fragrant.
  3. Stir in the oregano, potatoes and broccoli florets and cook for another 5 minutes then pour in the stock/broth.
  4. Season with salt and pepper then bring to the boil.
  5. Reduce the heat and simmer with the lid ajar for 15-20 minutes or until the potatoes are tender.
  6. Transfer the soup to a blender (or use an immersion blender) and blend with the spinach until smooth.
  7. Blend in batches if you are cooking a big pot of soup.
  8. Pour the soup back into the pot and add the cream.
  9. Taste and adjust seasoning if necessary then simmer for 5 minutes then serve with garlic bread grilled cheese.
