  • 1 lb chicken breast (diced into 1 inch pieces)
  • 2 tablespoons olive oil
  • 1 can diced tomatoes 14.5 oz, fire roasted
  • 1 teaspoons Cajun seasoning
  • 1 cup heavy whipping cream
  • 12 oz. penne pasta (cooked and drained)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp parsley chopped - optional, fresh

Instructions

  1. Heat the olive oil in a large skillet over medium high heat. Add the chicken and season with the salt and pepper.
  2. Cook the chicken for 10-12 minutes until the chicken is a golden brown.
  3. Stir in the diced tomatoes, cajun seasoning and mix well. Cook uncovered for 3-5 minutes until the sauce is simmering slightly.
  4. Stir in the cream and heat just until the cream is heated through (1-2 minutes).
  5. Stir in the cooked pasta right before serving.
  6. Serve topped with the fresh parsley and enjoy!
