Creamy Cilantro Lime Coleslaw

This creamy cilantro lime coleslaw blends shredded cabbage and carrots with sliced green onions and a mild jalapeño bite. The dressing of sour cream, mayonnaise, lime juice and zest, and fresh cilantro creates a tangy, fresh, and slightly spicy dressing that coats the crisp slaw mix. It offers a bright, refreshing side perfect for balancing richer dishes with its creamy texture and zesty flavors.

Description

The slaw is made from a classic coleslaw mix combined with green onion slices, chopped cilantro, and minced jalapeño, which adds subtle heat without overwhelming. The dressing whisked together is a creamy blend of sour cream, mayonnaise, and lime juice with zest, seasoned simply with salt and black pepper. Chilling the combined slaw for at least 20 minutes helps the flavors meld and softens the raw cabbage slightly while retaining crispness.

This recipe is an adaptable side that pairs well with grilled meats, tacos, or summertime meals where bright acidity cuts through richer flavors. The cilantro and lime add a fresh twist to traditional coleslaw, making it a refreshing complement.

You can prepare your own coleslaw mix by shredding about 6 to 7 cups of cabbage with carrot if preferred, which allows control over the texture and freshness.
