Creamy Healthy Carbonara With Sweet Potato Noodles

This recipe transforms traditional carbonara by using spiralized sweet potatoes instead of pasta, creating a creamy dish combining crispy bacon, tender sweet potato noodles, and a smooth egg-goat cheese sauce. It offers a balance of smoky, savory bacon, and tangy goat cheese that thickens around the sweet potato noodles, resulting in a hearty yet lighter-feeling carbonara variation.

Description

Creamy Healthy Carbonara With Sweet Potato Noodles replaces the usual wheat pasta with spiralized sweet potatoes, which soften as they're cooked in bacon grease, delivering a slightly sweet, tender noodle alternative. The bacon cooks crisp to add a crunchy, smoky contrast. Meanwhile, the sauce made from whisked eggs and goat cheese creates a creamy coating that lightly thickens when tossed quickly with the noodles and bacon, binding the dish without scrambling the eggs. Seasoning with salt, black pepper, and fresh parsley adds freshness and depth.

The sweet potato noodles provide a unique texture that is softer yet slightly firmer than traditional pasta, complementing the richness of the bacon and goat cheese sauce. This dish is served immediately while warm, maximizing the creamy sauce appeal and crispy bacon texture. Garnishing with chopped parsley adds a hint of herbal brightness.

Ingredients

Servings
  • 4 Bacon strips
  • 12 ounces sweet potato spiralized
  • 1 egg large
  • 2 ounces goat cheese
  • salt to taste
  • black pepper to taste
  • parsley chopped, for garnish, fresh

Instructions

  1. Heat a large frying pan on medium heat and cook the bacon until crisp, around 10 minutes.
  2. Transfer the cooked bacon to a paper towel to blot off the excess oil, and then cut it up into small strips. Leave the bacon grease in the pan.
  3. Add the spiralized sweet potatoes to the pan and cook, stirring occasionally, until the potatoes just begin to wilt, about 8-10 minutes,
  4. While the potatoes cook, whisk together the egg and goat cheese until creamy.
  5. Once the potato noodles are tender, stir in the bacon strips. Then quickly pour the cheese/egg mixture into the pan and stir until the mixture has slightly thickened and is evenly coating the potato noodles.
  6. Season with salt and pepper and garnish with parsley.
